I heard that even if you use a online proxy redirection service, people in the network can still track which websites you visit. Is this true? How to we do a complete bypass of a proxy?

Is this an office network? If the gateway you are connected to acts as a proxy server there is nothing you can do to bypass it. Please explain more about your setup and what you are trying to accomplish.
