There are software packages that allow you to encrypt specific files and/or folders, but the problem is that you have to manually encrypt every new file you drop in there.
Other software creates a "vault" into which you can Drag & Drop files/folders, but that changes how you have your files and folders organized.
I'm looking for software that will allow me to:
1. Encrypt a specific file on the (NTFS) hard drive.
2. Designate multiple folders on my hard drive, and then anything dropped in those folders will automatically be encrypted
Anyone have any suggestions?

You could either use EFS, PGP NetShare or TrueCrypt. PGP costs money but has good key management. Truecrypt is free but has no key management. EFS, well the road to encryption is littered with the corpses of people who used EFS and didn't backup their keys.

None of these appear to do what I need; the ability to designate 2-3 folders on the hard drive as encrypted, and have every file dropped in those folders encrypted automatically...

PGP NetShare does do this. You create a folder and drop files in the folder and the file is automatically encrypted. Double click on the file in the folder and it is automatically decrypted.
You could use TrueCrypt by mounting a virtual encrypting disk.

I couldn't get it to do that. I did create an encrypted folder, and moved all of the files into it, and they did get encrypted.
BUT, I could only encrypt/decrypt the whole folder at once. Maybe I'm missing something, but there was no on-the-fly encryption/decryption...

I really like how you couldn't get it to work so there must be no such product.
You be licensed for PGP NetShare not standard PGP! You must create a NetShare folder which will appears in explorer as a standard folder but with a padlock on it. All files held in here are encrypted.

Download TrueCrypt 7.0 to Encrypt a specific file on the (NTFS) hard drive and Designate multiple folders on your hard drive to encrypt files.
